The control of quality of canned fish be done traditionally by the chemical and microbiological analyses. The technique of ultrasonic no destructive control is used in this work to access to the sought parameters. In this article, the ultrasonic technique is applied to acoustic signals backscattered by a Plexiglas receiver filled with canned fish oil. The phase velocity and attenuation in canned fish oil calculated by this technique gives good results versus the chemical and microbiological analysis that are heavy and expensive.

Le contrôle de la qualité des conserves de poisson se fait traditionnellement par des analyses chimiques et microbiologiques. La technique de contrôle non destructif par ultrason est utilisée dans ce travail pour accéder aux paramètres recherchés. Dans cet article, la technique ultrasonore est appliquée sur le signal acoustique rétrodiffusé par un récipient de Plexiglas rempli de l'huile de conserves. La vitesse de phase et l'atténuation dans l'huile de conserves calculée par cette technique donne de bons résultats par rapport aux analyses chimiques et microbiologiques qui ont l'inconvénient d'être longues et coûteuses.
