Effectively addressing the problem of Grease (FOG) in the sanitary sewer system is essentially a three-step process. First the grease must be separated from the wastewater stream using a Grease Interceptor. Secondly the grease must be removed from the grease interceptors. Third, the grease must be properly disposed of, removed to a treatment facility/recycling facility. Plumbing codes generally address only the first step but the second and third steps must be implemented by the “Authority having Jurisdiction” AHJ, The AHJ is most often the health department or sanitary sewer district or local DPW. Plumbing Codes do not generally apply to these areas of responsibility. An Ordinance is most often the powerful tool that these AHJ's need to enforce compliance. On going oversight is required to insure the grease interceptors are maintained, and routinely cleaned and grease is properly disposed. An Ordinance creates an atmosphere where support industries like grease haulers and grease recyclers can be developed and prosper.
