Abstract:
Purpose of review: This review assesses recent progress in applying manipulation of temperature and humidity to the management of postharvest decay in fruits and vegetables.Findings: With anticipation of reduced emphasis on the use of fungicides, the value of heat as a postharvest decay management tool has been investigated on several fruit crops, along with crop tolerance of heat treatment. The primary application of heat has been as a component of a multitactic decay management program, wherein components additively improve program efficacy.Directions for future research: Postharvest science can benefit from continued expansion and refinement of the integrated multitactic approach in which heat is used to greatest advantage. Further understanding and assessment of the relationship of heat to other tactics is needed, along with application to a wider range of crops.Keywords: FRUIT STORAGE; HUMIDITY; TEMPERATURE; POSTHARVEST DECAY MANAGEMENT
