Abstract:
German supermarkets offer an immense choice of high quality food at low cost. However, the abundance of cheap food has a hidden cost, not apparent in the prices paid at the checkout counter: Namely, the prices do not include the ecological, health and social costs of food production and consumption. The aim of this article is to characterise major trends in nutrition which develop within the framework of changing economic and socio-demographic factors. Four different trends in nutrition are defined: money-saving, time-saving, health-conscious and environmentally aware consumption. The sustainability profiles of these consumption patterns are analysed and compared using ten sustainability indicators. The most sustainable consumption pattern is environmentally aware consumption, characterising consumers who care for the environment and for animals and who consider the economic welfare of the region they live in. This type of customer represents only a few percent of the German population - a percentage that may increase along with further growth in prosperity and an increasing awareness of the negative impacts of conventional production and nutrition patterns on human health and the environment.Keywords: EATING PATTERN; NUTRITION; SUSTAINABILITY; TRENDS IN NUTRITION
