Abstract:

An original procedure for initial rate accurate determination of enzyme activity under high hydrostatic pressure is reported. This method, adapted to most kinds of enzyme systems, is based on the use of the linear property of product formation during the initial phase of a reaction and does not require specific high pressure equipment. The reliability of the method was tested and illustrated with the study of Aspergillus niger fructosyl-transferase activity as a function of substrate concentration above 300 MPa. © Rapid Science Ltd. 1998
