Abstract:
Restriction proteolysis of the yolk proteins during the final oocyte maturation appears to result in the low content of free amino acids (FAA) and the unique FAA profile in Japanese eel Anguilla japonica eggs obtained by hormonal inducement.Keywords: Anguilliformes; eggs; free amino acids; Japanese eel; yolk proteins
