Abstract:

This paper argues that food studies is a model for interdisciplinary education by encouraging student synthesis among various disciplinary theories and methodologies. The emergence of food studies in both graduate and undergraduate learning is compared to the development of other interdisciplinary areas such as women's studies, American studies, and labor studies. The role of food studies in academia is discussed and arguments are made for the advancement of such courses as a means for examining complex sociopolitical issues.
